Shifting gears just a little bit, my next project for the day is the roast. Here I am searing it (all sides) in olive oil, garlic, tarragon, sage, rosemary, a little cabernet sauvignon and pepper. I will slow roast it at 250° for about three hours until it is medium rare. |
